Garlic roasted chicken leg quarters are tasty and easy on the budget. Serve this chicken with roasted or mashed potatoes and your favorite vegetables.

Ingredients
- 4 cloves garlic, finely minced
- 1 teaspoon dried leaf oregano
- 1/2 teaspoon salt
- 1 teaspoon chili powder
- 1/4 teaspoon ground cumin
- dash freshly ground black pepper
- 2 tablespoons olive oil
- 4 chicken leg quarters
- 1/2 cup chicken broth (part dry white wine, if desired)

Preparation
Step 1
Heat oven to 425 degrees.
Combine the garlic, oregano, salt, chili powder, cumin, and black pepper. Add olive oil and mix well. Use a mortar and pestle to make a paste consistency, or mash with a fork.
Wash chicken leg quarters and pat dry. Snip off any excess skin. Arrange the chicken pieces in a baking dish and pat the garlic mixture over each quarter. Pour 1/2 cup of chicken broth (part dry white wine, if desired) into the baking dish. Bake for 40 to 50 minutes, or until juices run clear. Serves 4.

This was perfect baked chicken. Flavorful & moist. I completely removed the skin from the chicken, so baked it covered with foil at 400 degrees, then about 10 minutes uncovered.
This has easily become one of my family's favorites. One thing I did differently, on accident, was poured the chicken stock in with the garlic mixture and poured it over the chicken. We actually prefer it that way, but either way...YUM!

Add Ground Cayenne! Instead of 1tsp of chili powder. Try 1/2 tsp chili powder and 1/2 ground cayenne. Yummmm.
Tasty Recipe! I made this last night. I followed the recipe, but doubled it due to my large family. I did add about 10-15 minutes of baking time, but that was it. It was delicious! My entire family loved it and is ready for me to make it again!
Very easy, very good! Was looking for a new roasted chicken recipe and found this one. I misread the instructions and used 1/2 cup each of wine and chicken broth; I also cooked for about 1 hour 20 minutes since I forgot about it. Neither goof affected the taste or texture IMO - skin was crispy and chicken was very flavorful. Did rub some of the paste under the skin. Will make the "mistakes" again next time! Expected a mexican flavor due to the chili and cumin but what results is a savory flavor. If it wasn't summer and so hot in the kitchen, I'd be making at least once a week!!
Very good chicken! I made this for the first time tonight and my family loved it. It was easy to make with things I have around the pantry. It took a little longer to cook than listed. Everyone loved the aroma in the house. I will make this again.

Tasty & VERY Easy! I fixed this for my family tonight. It was a hit. It was moist and flavorful-alittle crispy on the outside. I actually didn't have any garlic. I put alittle celery seed in the mix. I will definitely make this again.
Excellent seasonings! I enjoyed the rich flavor of the seasonings in this dish. I ran out of oregano, so I used sage for the rest. My chili powder was a bit spicy, so I skipped the pepper. I also used six cloves of garlic for 5 leg quarters. Since I'm avoiding fat, I removed the skin and fat from the leg quarters before baking. I sliced a couple onions into rings and put the chicken on those, then patted the seasonings on top. I used all white wine since I was out of chicken broth and baked it covered at 350 for 1 1/4 hours, turning once. Lower temp, covered, keeps skinned chicken from drying out. I removed the chicken to a warm platter, added a cornstarch slurry to the pan juices to thicken them slightly, then served them with fresh sweet corn and a spinach salad. Tender, juicy, flavorful -- wonderful!"
Very Tasty!! I loved this chicken..The ingredients are readily available in my pantry.. The chili powder gave it a wonderful taste..not spicy at all just very flavourful..I would definitely make it again..also it was super easy to make..I also subsituted the oregano for thyme, next time I would add more chili powder, just because I love the taste.
Wow! Whole family loved this! This was easy and delicious, something a little different.I made it exactly like the recipe. I thought it might be too spicy but it wasn't, but it was very flavorful. It took an extra 15 minutes for the chicken to cook. I basted it a couple times while baking. I made gravy from the drippings and served with mashed potatoes. My husband and 2 kids (ages 4 and 2) all loved this and begged me to make it again soon.
Easy and Delicious! This is now one of my favorite recipes! I always make chicken but wanted something different without it being too intensive. I found this recipe and I loved all the ingredients that go into it so I gave it a try. I didn't have oregano so I substituted it for french thyme and I didn't have chili powder so I used habanero powder. The result was wonderful! I don't know if it changed the original recipe all that much but this dish is SO good! It was really easy to prepare and you don't need to dirty a bunch of dishes just to make it. I loved the way the chicken made my house smell as it was baking in the oven. This is definitely a garlic-lovers recipe. Even though I may have overcooked my chicken, it was still tender. Yum! Definitely give this one a try!!
