Honey Beer Bread

One day while looking for something besides flour tortillas to have with chili, and with no yeast in the house, I started looking through Key Ingredient and found this recipe. This is the stripped down version which was a big hit even though it was made with non-alcoholic beer!

Ingredients
- 3 c all-purpose flour
- 2 T sugar
- 1 T baking powder
- 1 t salt
- 2 T honey
- 1 12 oz bottle of beer (with or without alcohol)
- 4 T butter, melted (The original recipe says you can double this
- but 1/2 stick of butter was plenty for us)

Preparation
Step 1
Preheat oven to 350 degrees. Grease a 9 X 5 X 3 inch loaf pan.
In a medium bowl, which together the flour, sugar, baking powder and salt.
Using a wooden spoon, stir the beer and honey into the dry ingredients until just mixed. Pop the honey in the microwave for a few seconds beforehand to make it easier to stir in.
Pour half the melted butter into the loaf pan. Then spoon the batter into the pan, and pour the rest of the butter on top of the batter. Use a pastry brush to spread it around if you like.
Bake for 50 to 60 minutes, until the top is golden brown and a toothpick/knife inserted in the middle comes out clean.
Serve immediately.
