Ingredients

  • 1

    cup fetta cheese, crumbled

  • 1

    cup mazzarella cheese (shredded)

  • 1

    cup diced English cucumber

  • 1

    large tomato, finely chopped

  • ½

    cup chopped kalamata olives

  • 1

    pkg of large tortillas

  • salt and pepper to taste

  • You can add ground beef with fajita mix if you like!

  • DIPPING SAUCE:

  • cups plain yogurt

  • 1

    Tbsp chopped fresh dill

  • 1

    tsp olive oil

  • 1

    tsp lemon juice

  • 1

    clove garlic, minced

Directions

1. In a small bowl, whisk together all ingredients for dipping sauce and set aside. 2. In a large bowl, stir together feta, mazzarella, cucumbers, tomatoes, olives and salt and pepper. 3. If you are adding meat: In a large frypan fry up the ground beef until done. Add the fajita mix and follow recipe on package. 4. Place some of cheese mixture on half of tortilla. Fold over and press dpwn. (If you are adding ground beef, add some beef on top of the cheese mixutre before folding the tortilla over) Repeat with next 3 or 4 tortillas. 5.Place your quesadillas On a foil lined baking tray. 6. Place try into a preheated 400 degree oven. 7. Check after 2 minutes to see if the tortilla is browning. If so flip over tortillas and continue baking for 2 minutes or until the torilla is brown on the edges and the cheese is melted inside. 8. Serve with dipping sauce or with sour cream and salsa.
