Ingredients

  • 6 cutlets cut into strips
  • 1/4 cup flour
  • 2 egg whites
  • 1 tablespoon mustard
  • 2 cups finely crushed salted pretzels
  • SAUCE
  • 1/2 cup unsweetened jam
  • 1/2 cup dijon mayonnaise
  • 1/4 cup + 2 tablespoons honey
  • 1/2 teaspoon cayenne powder
  • 3/4 teaspoon garlic powder

Step 1

1 Preheat oven to 400°F.
2 Spray baking sheet with nonstick cooking spray.
3 Cut each breast into 6 to 8 bite-size pieces.
4 Place flour in resealable plastic bag.
5 Blend egg whites and mustard in small shallow dish.
6 Place crushed pretzels in separate shallow dish.
7 Add chicken pieces to flour in bag; shake to coat evenly.
8 Dip a piece of chicken in egg mixture; coat evenly with pretzel crumbs and place on baking sheet. Repeat with remaining chicken.
9 Bake chicken 9 to 11 minutes or until done (internal temp 170°F).
10 Combine all sauce ingredients over low flame, cool, serve.
