Ingredients
- In deep bowl, combine:
- 1 tsp. finely chopped garlic
- 2 Tbsp. soy sauce
- 1 Tbsp. brown sugar
- 2 tsp. lemon juice or vinegar
- Add: 3 cups chicken or quality cuts of beef, cut in 1- inch cubes. Marinate for 30 min. or longer.
- I threaded these meat chunks on the skewers with a combination of fresh mushrooms, red and green bell pepper, and onion.
- Brush lightly with oil, and grill until crisp and brown. Dip in peanut sauce and serve with brown rice.
- Spicy Peanut Sauce
- Stir to make paste:
- 3 Tbsp. natural chunky peanut butter
- 3 Tbsp. milk (or water)
- Add:
- 1/4 cup soy sauce
- 3 Tbsp. brown sugar
- dash garlic powder
- 1 tsp. lemon juice
- 1 bay leaf

Mix and let stand several hours at room temp to blend flavors. Remove bay leaf before serving.
