  • 3 tablespoons plus 1 tablespoon butter, divided
  • 8 garlic cloves, peeled
  • 1 cup red wine vinegar
  • 3 large tomatoes or 1 1/2 cups crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 bouquet garni
  • 1 cup chicken broth
  • 1 tablespoon chopped, fresh parsley

Step 1

Heat the butter over medium-high heat in a large skillet. Season the chicken pieces with salt and pepper and brown them in 3 tablespoons butter, 3 to 4 minutes on each side.

Add the garlic cloves to the pan and continue cooking for 10 minutes. Drain the fat from the pan and add the vinegar to the chicken and garlic. Bring the mixture to a simmer for 10 -15 minutes, until it has reduced.

Add the tomatoes, tomato paste, and bouquet garni to the pan and continue simmering the ingredients for 15 minutes, until the chicken is very tender. Carefully transfer the cooked chicken to a warmed serving platter and tent it with foil to keep it warm.

Add the chicken broth to the pan and bring the mixture to a boil for, stirring frequently, for 5 minutes. Remove the bouquet garni and force the sauce through a sieve. Stir 1 tablespoon of butter into the sauce and serve it over the chicken. Garnish the finished vinegar chicken sauté with chopped parsley.
