Ingredients
- 12 oz. butter
- 48 oz. carrots
- 24 oz. onions
- 24 oz. celery
- 20 oz. turnip
- 10 oz. string beans
- 24 oz. potatoes
- 1 lb. peas
- 2 1/2 gal turkey stock
- 6 Tbsp salt
- 1 Tbsp white pepper
- 2 cans tomato soup
- 4 cups pre-cooked barley

Step 1
Saute carrots, onions, celery, and turnip in butter. Season with salt and pepper. Bring stock to a boil. Add vegetables to stock. Simmer for 30 minutes. Add remaining vegetables, barley and tomato soup. Simmer for another 20 minutes. Taste for seasoning.
