Ingredients

  • 1 tablespoon sesame oil
  • 2 teaspoons minced garlic
  • 2 teaspoons minced fresh ginger
  • 1 tablespoon chili garlic sauce
  • 1/4 cup thinly sliced green onions, plus more for garnish
  • 1/4 cup honey
  • 2/3 cup low-sodium soy sauce
  • 2/3 cup water
  • 3 pounds flanken-cut beef short ribs, each about 1/2" thick and 6" long
  • 1/3 cup hoisin sauce

Preparation

Step 1

In stovetop pressure cooker, combine sesame oil, garlic, ginger, chili garlic sauce, 1/4 cup green onions, honey, soy sauce and water. Add short ribs, arranging them so they are covered with liquid. Lock lid into place. Bring cooker up to high pressure; maintain high pressure for 30 minutes. Quick-release pressure. Transfer short ribs to platter; tent with foil.
Skim excess fat off sauce. Set pressure cooker over medium-high heat. Simmer sauce until reduced to 1 cup, 5 - 7 minutes. Remove from heat; stir in hoisin sauce. Pour sauce over short ribs. Garnish with diced green onions. Serve immediately.
