Ingredients

  • 1 cup butter, softened
  • 1 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1 cup confectioners sugar, sifted
  • 2 eggs
  • 2 tsp vanilla
  • 4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 cups chopped pecans
  • 1 1/4 cups confectioners sugar
  • 1 tsp vanilla
  • 1/2 cup pure maple syrup

Step 1

1. Preheat oven to 375F. In a large bowl, cream together the butter, oil, sugar, light brown sugar and confectioners sugar until smooth. 2. Beat in the eggs one at a time, then stir in the vanilla. In a separate bowl, combine the flour, baking soda, cream of tartar, salt and cinnamon. Stir the flour mixture into the creamed mixture. Mix in the chopped pecans. 3. Roll dough into 1" balls and roll each ball in sugar or skip this if using Maple Glaze. Place cookies 2" apart onto ungreased cookie sheets. Flatten cookies just a bit and bake for 10-12 mins in the preheated oven or until the edges are golden. Remove from cookie sheets to cool on wire racks. 4. Meanwhile to make Maple Glaze, mix together confectioners sugar, vanilla and maple syrup. After cookies have cooled for a bit, brush on Maple Glaze.
