Frozen Strawberry Cream Dessert

This is a frozen, fruity treat perfect for those hot days of summer! It's a light, fluffy cream loaded with strawberries and topped with a flavorful blueberry sauce. It takes some advance planning since it needs to freeze for a couple of hours before serving, but it's well worth it!

Ingredients
- 3/4 cup of sugar (we use a sugar substitute, like Splenda)
- 2 - 8 oz. bars of cream cheese, softened
- 1/2 cup of sour cream (we use Fat Free)
- 3 cups of strawberries ( I used thawed frozen strawberries, but fresh strawberries can be used also.)
- 1 cup of Cool Whip (also sugar free)
- Blueberry Sauce Ingredients
- 1- 12 oz. pkg of blueberries (I used fresh but frozen works, too)
- 1/3 cup of sugar (or a sugar blend)
- 1/4 cups of water

Preparation
Step 1
Line a 9x5 loaf pan with aluminum foil.
In a large mixing bowl, combine the sugar, cream cheese, and sour cream until well blended. Drain the strawberries, if needed, and fold into the cheese mix. Fold in the Cool Whip also. Pour into prepared loaf pan. Cover and freeze for about 2 hours.
Blueberry Sauce
In a small saucepan, combine the blueberries, sugar and water. Bring to boil and cook for about 3 minutes. Transfer to blender or processor and puree. Refrigerate until chilled.
To Serve: Remove the cream from the freezer and allow to stand for 20 minutes. Use the foil to remove from pan and then remove the foil. Slice to serve and top with blueberry sauce.
