Cilantro Soup

light flavorful soup. The recipe was shared with us by an out of work Hungarian musician working the kitchen for the night in Estes Park, Co. His father was an excellent cook back home and had taught him the basics of cooking. This was his rendition of the soup of the day for the restaurant. The recipe is "approximate" as told to us.

Ingredients
- 12 cups chicken broth (or bullion)
- 1 and 1/2 tsp oregano
- 1/2 tsp ground cumin
- 1 tsp minced garlic
- 1/2 of a large onion chopped
- 1 bell pepper chopped (red is best)
- 1 jalepeno Pepper seeded and deveined, minced
- 1 med sized pablano seeded and cleaned, minced
- 1/2 chicken
- salt and pepper to taste
- 1 stalk celery chopped
- 3/4 cup chopped carrots
- 1 or 2 small zuchini halved and sliced
- 1 large bunch cilantro chopped, stems and leaves included. (he told us the best flavor is in the stems)

Preparation
Step 1
Place all ingrediants except zuchini and cilantro in pot and cook chicken until done. Remove chicken and cooluntil you can remove meat from bones. place chicken meat back in pot add zuchini and cook for 10 min About 5 min befor serving add the cilantro and cook serve with some nice crusty bread and butter
