Ingredients
- 4 large baking potatoes, scrubbed and pierced with a fork
- 1 cup low-fat cottage cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup (2 ounjces) shredded reduced-fat Cheddar cheese
- 1/2 cup mild salsa
- 1 scallion, chopped

Preparation
Step 1
Preheat the oven to 400 degree.
Place potatoes on rimmed baking sheet and bake for 60 to 90 minutes, or until fork-tender.
In small bowl, combine cottage cheese, salt, and pepper.
Remove potatoes from oven and cut slit in top of each. Squeeze ends together, forming pockets. Spoon 1/4 cup cottage cheese mixture into each potato. Sprinkle evenly with Cheddar cheese and top each potato with salsa and chopped scallion. Serve immediately.
Notes;
For faster baked potatoes, you could "bake" them in your microwave, according to the manufacturers' directions.
