Ingredients

  • 1 c sifted icing sugar
  • 1/2 c butter
  • 1/2 c white sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 c all purpose flour
  • 1 tsp baking powder
  • Raspberry jam
  • 1 c sifted icing sugar
  • 1/4 tsp almond extract
  • Hot water of milk
  • Candied cherries (optional)

Preparation

Step 1

Preheat oven to 350
Cream butter
Add sugar and cream well
Beat in egg and vanilla
Combine flour and baking powder
Gradually add to cream mixture
On a lightly floured surface roll dough to 1/8" thickness
Cut into 2" rounds
Place on ungreased baking sheets
Bake 10 min or until lightly browned on edges
Cool thoroughly
Spread half of cookies with jam
Top with remaining cookies
Combine icing sugar,almond extract and enough hot water milk to make a thin icing
Frost the tops of the cookies and top each with a small piece of cherry
Store in a covered tin box (cookies will soften)
I freeze them
