Ingredients

  • 2 lbs medium carrots, peeled
  • 3/8 t kosher salt
  • 1 1/2 t grated lemon rind
  • 2 T lemon juice
  • 1 t Dijon mustard
  • Dash of red pepper
  • 2 cloves minced garlic
  • 1/4 C olive oil
  • 12/4 black pepper
  • 2 T thinly sliced chives

Step 1

Cur carrots into fine julienne. Sprinkle with 1/4 t Salt. Combine lemon rind, juice, Dijonmustard, nee pepper & garlic in small bowl. Gradually, add oil, stirring constantly with a whisk. Stir in remaining salt & pepper. Add half of vinaigrette to carrot mixture; toss to coat. Let stand 1 hr. Add remaining vinaigrette; sprinkle with chives & serve
