Ingredients

  • 1/4 cup green chiles, diced
  • 1/2 cup sour cream
  • 1 Tbsp. green onion, chopped
  • 1/2 tea. salt
  • 1 cup cooked rice
  • 1/2 cup jack cheese, shredded
  • 1 tomato, sliced
  • 1/4 cup Parmesan cheese, grated

Step 1

In a small bowl, mix together chiles, sour cream, green onion and salt. Place 1/2 cup rice in a lightly buttered 8" or 9" pie pan. Spoon 1/2 of the sour cream mixture over rice. Sprinkle with 1/2 cup jack cheese. Repeat layers and top with sliced tomato and Parmesan cheese., Bake 12 minutes, or until cheese melts and begins to bubble.
