Ingredients

  • 8 squares unsweetened chocolate
  • 2 stick butter
  • 5 eggs
  • 1 tablespoon vanilla
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons instant expresso or other powdered instant coffee
  • 3/4 cup sugar
  • 2 cups (generous) walnut halves
  • 1 2/3 cups King Arthur flour, sifted

Step 1

Peheat oven to 425 degrees. Line a 9-by-12-inch baking pan with aluminum foil, pressing foil into place. Butter the foil. In a double boiler over low heat, melt the chocolate and butter. In a large bowl, beat the eggs, vanilla and almond extracts, salt, powdered coffee and sugar at high speed for 10 minutes. Reduce mixer speed to low and add the chocolate mixture. Blend at low speed only until mixed, add flour and blend only until mixed. Stir in the walnuts. Pour mixture into prepared baking pan. Spread mixture evenly in the pan. Bake in 425 degree oven for 30-35 minutes. Remove brownies from oven and cool on a wire rack. Once coole, invert pan over a small cutting board or plate. Remove foil and invert again onto cutting surface. Let stand for 6-8 hours or refrigerate 2-3 hours before cutting (middle will be soft and chewy). Cut into squares using a serrated bread knife, wiping blade with a damp cloth after each cut.
