  • 1/2 cup Flour
  • 1 cup sugar
  • 1/4 tsp salt
  • 2 cups coconut, shredded
  • 4 egg white
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • Maraschino cherries, halved

Preparation

Step 1

COMBINE flour, 1 cup (250 mL) sugar, salt and coconut. Stir well to blend.



BEAT egg whites until foamy. Gradually add 1/4 cup (50 mL) sugar beating until stiff peaks form. Add vanilla.



FOLD flour mixture, half at a time, into meringue.



DROP rounded teaspoonfuls of a mixture onto aluminum foil lined baking sheets. Top each with cherry half.



BAKE at 325°F (160°C) for 20-25 minutes or until set. Cool cookies thoroughly before removing from foil.
