Ingredients
- 3 cups heavy cream
- 6 tbls sugar
- 6 egg yolks
- 2 tsp vanilla
- 1/2 cup light brown sugar

Step 1
1) Preheat oven to 300 degrees 2) Heat cream and stir in sugar. 3) Beat egg yolks until light. 4) Pour hot cream over them gradually, stirring vigorously. 5) Stir in vanilla and strain into ramekins. 6) Place ramekins in pan containing 1" of hot water. 7) Bake 35 minutes or until knife inserted in comes out clean. (Do not over bake, custard will continue to cook when removed from oven.) 8) Chill thoroughly. 9) Before serving, cover custard with brown sugar and use torch to melt and brown the sugar.
