Ingredients

  • 4 hardboiled eggs, peeled and chopped
  • 1/4 cup mayonnaise alternative, like Vegenaise with grapeseed oil
  • 1 celery stalk, finely chopped
  • 2 tsp. red or sweet white onion, finely chopped
  • 1 1/2 tsp. fresh squeezed lemon juice
  • freshly ground black pepper & sea salt to taste

Step 1

Gently toss eggs and celery together in a medium size bowl. In a smaller bowl, combine Vegenaise, lemon juice, onion, salt&pepper. Fold into the egg and celery mixture. Season to taste with salt&pepper. Chill for about an hour before serving. Serve over a bed of greens.
