Ingredients
- 1 T coconut oil
- 3 eggs
- 1 handful spinach
- 1/4 small onion, thinly sliced
- 1/2 cup mushrooms
- 1 T garlic, pressed
- 1/2 cup sundried tomatoes
- 3 T crumbled feta cheese (optional)

Preparation
Step 1
In a bowl, beat the eggs. Stir in spinach, onion, mushrooms and garlic. Season with sea salt and pepper. In a small skillet, heat oil over medium heat. Cook egg mixture about 3 minutes, or until partially set. Flip with spatula and continue cooking 2-3 minutes or until done. Top with tomatoes and feta cheese.
