Ricotta Biscotti Cookies
My aunt shared this recipe with my mom and this has quickly become a Christmas favorite.

Ingredients
- Cream: 2 cups sugar
- 2 stick of butter (softened)
- Add: 3 eggs
- 2 tsp vanilla
- Sift together: 4 cups flour
- 1 tsp salt
- 1 tsp baking soda
- Alternate with 1 pound Ricotta cheese, starting with the flour.
- Frost with almond flavored powdered sugar frosting (see below).
- 3-3 1/2 cups powdered sugar
- 1 1/2 tsp almond flavoring
- 1/4 cup milk
- 2 TBSP butter

Preparation
Step 1
Drop by teaspoon on lightly greased cookie sheets (I don't usually do this, depending on the quality of your baking sheets). Do not flatten.
Bake 8 minutes at 350 degrees until the bottom of the cookies are light brown. These are soft cookies, so don't over bake.
Yields about 6 dozen cookies.
