Ingredients
- 8 tablespoons olive oil (divided)
- 5 large cloves garlic, minced (divided)
- 1 loaf (8 ounces) Dierbergs French baguette bread
- 3 tablespoons white wine vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 pounds tomatoes, cored and cut into 1 inch pieces (about 4 to 5 tomatoes)
- 1/2 red onion, thinly sliced
- 4 ounces blue or feta cheese, crumbled

Preparation
Step 1
In small bowl, combine 5 tablespoons of the olive oil and 3 cloves of the minced garlic. Let stand at room temperature for 30 minutes. Cut bread in half crosswise and split lengthwise. Brush both sides with garlic-flavored oil. Place on grid over medium-hot coals and grill for about 2 minutes per side until golden (watch carefully so bread does not burn). Cut into 1-inch cubes; set aside. In large salad bowl, whisk together remaining 3 tablespoons olive oil, vinegar, remaining minced garlic, salt and pepper. Gently toss in tomatoes and onion. Let stand 30 minutes. Just before serving, toss in bread cubes. Crumble cheese over the top.
