Ingredients
- Pesto:
- 1 cup of fresh mint leaves
- 1/3 cup olive oil
- 2 tablespoons feta cheese
- ½ teaspoon of crushed peppers
- Juice and zest of a lemon
- Salt and pepper
- Pasta:
- A little bit of olive oil
- 2 to 3 garlic cloves split in two
- 3 marrows cut in 4th then sliced to ½ inch
- 1 lb of short pasta
- 6 ounces of feta cheese (1 ¼ cup)
- Salt ad pepper
- Roasted pine nuts

Step 1
1. Start to do the pesto by putting all ingredients in a cuisinart then pulsing 2 to 3 times or until crushed. Reserve. 2. Start the pasta by warming the olive oil in casserole and infusing the garlic cloves during a few minutes. 3. Add the marrows and sauté until crisp. 4. Cook the pasta in salted boiling water accordingly. 5. Mix everything and add the pine nuts.
