Ingredients

  • Pesto:
  • 1 cup of fresh mint leaves
  • 1/3 cup olive oil
  • 2 tablespoons feta cheese
  • ½ teaspoon of crushed peppers
  • Juice and zest of a lemon
  • Salt and pepper
  • Pasta:
  • A little bit of olive oil
  • 2 to 3 garlic cloves split in two
  • 3 marrows cut in 4th then sliced to ½ inch
  • 1 lb of short pasta
  • 6 ounces of feta cheese (1 ¼ cup)
  • Salt ad pepper
  • Roasted pine nuts

Preparation

Step 1

1. Start to do the pesto by putting all ingredients in a cuisinart then pulsing 2 to 3 times or until crushed. Reserve. 2. Start the pasta by warming the olive oil in casserole and infusing the garlic cloves during a few minutes. 3. Add the marrows and sauté until crisp. 4. Cook the pasta in salted boiling water accordingly. 5. Mix everything and add the pine nuts.
