Ingredients

  • 4 boneless chicken breasts
  • coarse salt and fresh ground pepper
  • 2 Tbsp olive oil
  • ¼ cup dry white wine or chicken broth
  • ½ cup heavy (whipping) cream
  • 2 Tbsp Dijon mustard
  • 1 tsp dried tarragon or 1 Tbsp fresh chopped tarragon

Step 1

Sprinkle each chicken breast with salt and pepper. In a large skillet, heat the olive oil over medium heat and add the chicken. Saute until cooked through, turning once (10 to 12 minutes). Transfer to a plate and keep warm.

Pour the wine into the hot skillet and cook, stirring until reduced by half, about one minute. Whisk in the cream, mustard and tarragon. Cook, whisking until thickened, about 2 minutes.

Pour any accumulated chicken juice into the sauce and add the chicken to the sauce or drizzle the sauce over the sautéed chicken.

Serve with roasted potatoes.
