Ingredients

  • 4 pounds boneless beef chuck,round or rump roast
  • salt and pepper
  • thyme
  • 2 onions,grated
  • 2 ripe tomatoes,peeled,seeded and choppod,or 2 canned tomatoes,drained

Preparation

Step 1

Place meat in center of about 2-foot lenght heavy-duty foil.Season with salt and pepper and a generouse sprinkle of thyme.Combine onions and tomatoes and spread over meat.Bring long ends of foil together and make a double fold,allowing some slack for expansion during roasting.Turn side up and seal securely so juices won't run out.Place meat package in roasting pan and bake in 250 oven 5-1/2 hours.Serve with baked potatoes.
