Ingredients

  • 3 cups bell peppers
  • 1 cup red onion
  • 2 Tbsp olive oil (divided)
  • 4 small, skinless chicken breasts
  • 1 Tbsp olive oil
  • 2 tsp fresh thyme
  • 2 tsp minced garlic
  • 2-3 Tbsp sherry or red wine vinegar
  • 1 tsp chopped fresh thyme

Preparation

Step 1

1. Heat oven to 450°F.

2. Toss 3 cups bell peppers and 1 cup red onion with 1 Tbsp olive oil on large sheet pan. Move to one side.

3. Coat other side of pan with olive oil spray, and top with 4 small, skinless chicken breasts. Rub tops of chicken with paste made of 1 Tbsp olive oil, 2 tsp fresh thyme, and 2 tsp minced garlic. Season.

4. Roast until chicken is golden and cooked through and vegetables are tender, 17 to 20 minutes. Transfer chicken to cutting board. Cover and let stand 5 minutes before slicing.

5. Toss pepper mixture with 2 to 3 Tbsp sherry or red wine vinegar and 1 tsp chopped fresh thyme. Serve with chicken and cooked broccolini.
