Ingredients

  • 2 cups flour (500 ml.)
  • 2 tbsp. granulated sugar(30 ml.)
  • 4 tbsp. unsalted butter, cut into pieces and chilled (60 ml.)
  • 4 egg yolks
  • 1/4 cup sour cream(50 ml.)
  • 1 tbsp. rum (15 ml.)
  • vanilla confectioners’ sugar

Step 1

Mix the flour and granulated sugar together on a pastry board and make a well in the centre. Drop the butter pieces into the well and cut them into the flour mixture. Add the egg yolks, sour cream and rum, and with a table knife fold the flour mixture over them. With your hands, knead the dough until it is smooth and moderately soft. Refrigerate the dough for about one hour.

Divide the dough into three parts. On a lightly floured board, roll one part at a time to a thickness of about 1/8 inch (3 mm). With a pastry wheel or a knife, cut the dough into 2- by-4-inch strips. Make a diagonal slit about ¾ inch (2 cm.) long in the centre of each strip, then pull one end of the strip through the slit as far as it will go.

Heat the oil to a temperature of 375 degrees F. (190 degrees C.) on a deep-frying thermometer. Deep fry several cookies at a time until they are golden brown on both sides.

Immediately remove them with a slotted spoon and place them on paper towels to drain. Roll, cut and fry the remaining dough. While they are still hot, sprinkle the cookies with vanilla confectioners’ sugar.
