  • 12 oz. hot turkey Italian sausage, cut into 1/4" slices
  • 1 red bell pepper, seeded and sliced
  • 1 green bell pepper, seeded and sliced
  • 1 yellow bell pepper, seeded and sliced
  • 1 onion, sliced
  • 1/4 cup chicken broth
  • 3 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon dried oregano
  • Salt and freshly ground pepper, to taste

Step 1

Spray a 12" nonstick skillet with cooking spray. Cook the sausage, stirring frequently, until no longer pink, 4-6 minutes. Add the peppers, onion, broth, garlic, crushed red pepper and oregano. Cook, stirring frequently, until most of the liquid evaporates, about 5 minutes. Reduce the heat and simmer, covered, until the peppers are tender, 3-4 minutes longer. Season with salt and pepper and serve.
