Ingredients

  • 2 1/3 cup uncooked rice
  • 1 tsp. salt
  • pepper to taste
  • 1 tsp. sugar
  • 3 tbsp. vegetable oil
  • 1 14 oz. can stewed tomatoes
  • 1 cup water
  • 1 medium onion, diced
  • 2 large green peppers, chopped
  • 2 or 3 slices bacon, cooked and chopped

Step 1

Fry bacon. Pour bacon drippings in casserole dish. Mix all ingredients together and place in casserole. Bake at 350 degrees for 1 hour. If too dry, add a little more water. Variation: Use a 28 oz. can of tomatoes and no water. It works great this way as well and has a little more flavor.
