  • 12 oz. pasta
  • 8 pieces of bacon, diced small
  • 1/2 medium onion, diced small
  • 2 cloves garlic, minced
  • 3 eggs
  • 3/4 cup fine Parmesan
  • 3/4 cup heavy cream
  • salt
  • black pepper
  • 1/2 cup peas

Step 1

While pasta is cooking, fry the bacon until just barely crisp. Remove from the pan and drain on paper towels. Pour off all bacon grease, but don't clean the pan. return pan to medium heat and cook onions and garlic to golden brown, place aside with bacon. In a bowl, mix together eggs, Parmesan, cream, salt and pepper until smooth. When pasta is done reserve 1 cup cooking water, drain pasta and place in bowl. While pasta is still really hot, slowly drizzle egg mixture, stirring fast the whole time. Sauce will Become thick and should coat pasta. Splash cooking water if needed. Halfway through, add peas, bacon, onion and garlic. Finish adding sauce and stir until all combined. Serve!
