  • 1 lb peeled parsnips (approx 4 cups)
  • 1 cup thinly sliced scallions
  • 1/4 cup flour
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 2 beaten eggs
  • 2 tbsp vegetable oil
  • 1/2 cup panko

Preparation

Step 1

using a food processor, shred parsnips. In large bowl, toss together with scallions, flour, sstir in eggs. In large skillet, heat oil over medium-high heat. Gently fold breadcrumbs into parsnip mix until just combined. WOrking in batches and adding more oil as needed, drop rounded tbsps in 1 inch apart. Flatten slightly with a spatula and fry, turning once, until crisp and golden (approx 5 minutes). serve immediately
