Ingredients
- 4 boneless chicken breasts
- 3 lbs smoked sausage
- 4 cans chicken broth (1 large & 1 small)
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 3 medium onions
- 1 stalk of celery
- 2 tbls of kitchen bouquet
- 2 tbls of minced garlic
- 2 tsp of Zatarains Crab Boil concentrate
- 2 lbs of Uncle Ben's converted original rice
- Enough Olive oil to coat the bottom of both pans
- Optional: 2 cans of original rotel

Preparation
Step 1
1 batch feeds about 10 people. Pot #1: Coat bottom of pan with olive oil. Set burner to medium heat. Add chicken (cubed) Add minced garlic When chicken is almost done add smoked sausage (cubed) Pot #2: Coat bottom of pan with olive oil Set burner to medium heat Add peppers (diced) Add onion (diced) Add celery (diced) When onion begin to turn clear add Pot #2 to Pot #1 Add Chicken Broth Add Kitchen Bouquet Add Zatarains Crab Boil Concentrate Bring to a boil. Add rice and cover, turn heat to simmer. Stir infrequently for approx 30 mins. Add Creole seasoning, salt to taste and serve.
