Ingredients

  • 4 Serving (1cup )
  • 2 Skinless chicken breast (8oz)
  • 1/2 Yellow Onion
  • 2 Shallots
  • 2 Cloves garlic
  • 1 Large Red bell Pepper
  • 1/3 cup celery (top portion with leave)
  • 1 stalk of Scallion or green onions
  • 2 twig of Thyme
  • 1 Cup mushroom (optional)
  • 2 Tbsp chicken/veggie stock
  • 4 Cup Organic Chicken/veggie stock
  • 3 to 4 Cups Spinach OR (kale,mustard green, basically your favorite
  • Pinch of red pepper flakes (to taste)
  • Black pepper
  • Salt (optional) (found the chicken stock had enough

Preparation

Step 1

1. Dice onions, shallots,garlic, celery, bell pepper, scallion
saute for 2mins with 2tbsp of stock
2. Dice chicken breast into bite size pieces add to pot, turn until pink is gone, but not cook then
3. Add 4 cups of stock, thyme and simmer on medium high heat for 10-15mins, allowing chicken to fully cook thru. Once done turn off stove, add the 4cups of spinach serve and enjoy.

As i said this is a flexible recipe a vegan/vegetarian can add their allowable protein,. You can add butternut squash to it 4 pase 3 with some olive oil, or add some quinoa or brown rice noodle for phase1
