ROASTED RED PEPPER SALAD

Ingredients
- Dressing:
- 3/4 cup EVOO
- 1/4 cup sherry vinegar
- 2 cloves garlic, minced
- 2 TBS chopped fresh flat leaf parsley
- 2 TBS chopped fresh basil leaves
- 2 TBS chopped fresh mint leaves
- 1/2 tsp granulated sugar
- Salad:
- 4 large red bell peppers, roasted, peeled, seeded
- 3 TBS capers
- 12 black olives, pitted and chopped

Preparation
Step 1
1. Dressing: In small mixing bowl whisk together all ingredients. Season to taste w/ salt and pepper.
2. Salad: slice the roasted red bel peppers into thick slices and arrange on a small serving platter. Spoon the dressing over all, top w/ olives and capers. Allow to marinate 30" at room temperature before serving.
