Ingredients

  • Dressing:
  • 3/4 cup EVOO
  • 1/4 cup sherry vinegar
  • 2 cloves garlic, minced
  • 2 TBS chopped fresh flat leaf parsley
  • 2 TBS chopped fresh basil leaves
  • 2 TBS chopped fresh mint leaves
  • 1/2 tsp granulated sugar
  • Salad:
  • 4 large red bell peppers, roasted, peeled, seeded
  • 3 TBS capers
  • 12 black olives, pitted and chopped

Preparation

Step 1

1. Dressing: In small mixing bowl whisk together all ingredients. Season to taste w/ salt and pepper.
2. Salad: slice the roasted red bel peppers into thick slices and arrange on a small serving platter. Spoon the dressing over all, top w/ olives and capers. Allow to marinate 30" at room temperature before serving.
