First Class Peach and Spice Oatmeal Cookies

Spice, oatmeal, brown sugar and chunks of dried peaches. I sampled a commercial version of these on an Air Canada flight a few years ago. I rushed out of Customs as soon as I landed, dove into the BB test kitchen and replicated these amazing peach cookies. They were so good they almost made me forget my fear of flying. Here's the recipe - no passport needed. Make them small for the holidays. This is one of BB's most 'hit on' recipes of all time.

Ingredients

  • 1 cup unsalted butter
  • 2 cups brown sugar - packed
  • 2 tablespoons honey
  • 1 egg
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/8 teaspoon nutmeg
  • pinch (each) mace and ginger
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups oatmeal
  • 1 cup all purpose flour
  • 2 cups dried peaches - diced (if they are not moist, plump them in hot water, dry and dice)

Preparation

Step 1

Preheat oven to 350 F. Line doubled up baking sheets (one inside another) with parchment paper. Cream the butter and sugar thoroughly. Add egg and vanilla, then dry ingredients and fold in peaches. Blend well. Mold into large balls and place on cookie sheets. Bake, about 12-14 mintues til browned around the edges. Makse 2-3 dozen, depending on size
