Ingredients
- 2 C Flour
- 3/4 C Sugar
- 2 tsp Baking Powder
- 1/2 Salt
- 1 Egg, slightly beaten
- 1 tsp Orange Peel
- 2/3 C Orange Juice
- 1/4 C Canola Oil
- 1 C Cranberries,
- coursely chopped
- 1/4 C Chopped Walnuts
- 2 tsp Sugar

Preparation
Step 1
Bake 400º, 12 cup Muffin Pan.
Preheat oven, spray muffin cups
with cooking spray. In a large
bowl, combine flour, sugar, baking
powder, and salt. In a small
bowl blend egg, orange peel,
orange juice, and oil; stir into
flour mixture until moistened.
Stir in cranberries & nuts.
Spoon into muffin cups sprinkle
with 2 tsp sugar. Bake 18-20 min.
or until lightly brown.
Cool 5 minutes, remove from pan.
Makes 12.
