  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 teaspoon lemon juice
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup finely chopped pecans
  • Confectioners sugar
  • 1 cup confectioners sugar
  • 2 3 oz. packages cream cheese
  • 4 tablespoons margarine
  • 1/2 teaspoon vanilla

Step 1

Beat 3 eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Stir together flour, cinnamon, ginger, nutmeg and salt. Fold in pumpkin. Spread in greased and floured jelly roll pan. Top with 1 cup pecans. Bake 15 minutes at 375 degrees. Turn out on towel sprinkled with confectioners sugar. Starting at narrow end roll towel and cake together. Cool Unroll.

For filling combine confectioners sugar, cream cheese, margarine and vanilla. Bet until smooth. Spread over cake, roll up and chill.
