Ingredients
- Base:
- 2 c. flour
- 1 c. butter
- 2 tbsp. sugar
- pinch of salt
- Filling:
- 1 can crushed pineapple
- 1/4 c. sugar
- 2 tbsp. cornstarch
- 1/4 c. cold water
- 1/4 c. chopped cherries
- 2 egg whites
- 2 tbsp. sugar
- 1 tsp. vanilla
- Coconut

Step 1
Mix the flour, butter, sugar and salt. Press in bottom of a pan and bake at 350F for 20 minutes. Cook pineapple, sugar, cornstarch, cold water. Add cherries. Beat egg whites until stiff and fold in with sugar and vanilla. Top the filling mixture. Sprinkle with coconut and brown.
