Baked Harvest Oatmeal Muffins

Ingredients
- 2 cups old fashioned oats
- 1/4 cup ground flaxseed (optional)
- 2 tbsp flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 3/4 tsp salt
- 1 1/2 cups milk
- 1/2 cup unsweetened or berry applesauce
- 1/2 cup packed brown sugar or maple syrup
- 1 large egg
- 2 tbsp safflower oil
- 2 tsp vanilla

Step 1
Heat over to 350 degrees. Line 12-well muffin pan with cupcake liners.
In bowl combine oats, flaxseed, flour, baking powder, cinnamon and salt.
In large bowl, whisk together milk, applesauce, brown sugar, egg, oil and vanilla.
Add flour mixture, mixing just until combined. Stir in add-ins from list below, if desired.
Divide batter evenly among cupcake liners. Bake 20 minutes or until done. Serve warm or at room temperature.
ADD-INS:
Apple-Raisin-Pecan: Stir in 1/2 cup grated apples, 1/4 cup raisins and 1/4 cup chopped pecans.
Apricot-Walnut: Stir in 1/2 cup chopped dried apricots, 1/2 cup chopped walnuts, 1 tbsp orange juice and 1 tsp orange zest.
Banana-Chocolate Chip: Stir in 2/3 cup mashed banana and 1/3 cup chocolate chips.
Banana-Coconut: Stir in 1/2 cup mashed banana and 1/2 cup shredded sweetened coconut.
Blueberry-Lemon: Stir in 1 cup fresh blueberries, 1 tbsp lemon juice and 1 tsp lemon zest.
Cranberry-Walnut: Stir in 1/2 cup dried cranberries, 1/2 cup chopped walnuts, 1 tbsp orange juice and 1 tsp orange zest.
Peanut Butter-Chocolate Chip: Stir in 1/4 cup creamy or chunky peanut butter and 1/2 cup dark chocolate chips.
