Reuben Sandwich

Ingredients
- 2 tsp mustard, grainy deli-variety
- 2 slice(s) Weight Watchers light seedless rye bread
- 2 spray(s) cooking spray
- 3 oz turkey pastrami, sliced
- 1/4 cup(s) sauerkraut
- 2 Tbsp shredded fat free mozzarella cheese

Preparation
Step 1
Spread mustard on both slices of bread; set aside.
Lightly coat a large nonstick pan with cooking spray; place over medium-high heat. Add pastrami to pan and warm through, about 1 1/2 minutes. Move pastrami to one side of pan; add sauerkraut to pan and stir it until heated through, about 2 minutes. Remove pan from heat and transfer pastrami and sauerkraut to a plate; cover and set aside.
Lightly coat same pan with cooking spray and place over medium heat. Place 1 slice of bread, mustard side up, in pan; top bread with pastrami and then layer with sauerkraut and cheese. Carefully place remaining slice of bread, mustard side down, on top; gently press down with a spatula for about 2 minutes. Flip sandwich and heat for 2 minutes more; remove from heat promptly (to avoid burning bread, do not heat sandwich for more than 2 minutes on either side). Yields 1 sandwich per serving.
