NO BAKE MINCEMEAT MALLOW CHEESECAKE*

Ingredients

• 1 c. vanilla wafers
• 1/4 c. margarine
• 1 3/4 c. mincemeat
• 4 c. minature marshmallows
• 1/3 c. orange juice
• 2 8 oz. soften cream cheese
• 2 tsp. grated orange rind
• 1/2 pt. whip cream

Preparation

Step 1

Combine crumbs and margarine. Press into 9" spingform pan. Chill. Spread mincemeat over crust. Melt marshmallows with orange juice in double boiler. Stir until smooth. Chill til thick. Combine cream cheese and orange rind, beat until well blended and fluffy. Whip in marshmallow mix, fold in whip cream. Pour over mincemeat and chill until firm.
