Flourless Chocolate Pistachio Cake

Ingredients
- 2 eggs
- 2 egg yolks
- 3 Tablespoons sugar
- 1 cup almonds
- 1/4 cup sugar
- 1 cup pistachios, coarsely ground
- 1/4 cup cocoa powder
- 3 Tablespoons butter
- 1/4 cup chocolate chips
- 1/2 cup chocolate chips
- 2 egg whites
- 2 Tablespoons sugar

Preparation
Step 1
Preheat oven to 350 degrees.
Beat the eggs and the egg yolks with 3 Tablespoons of sugar until thick and fluffy.
In a food processor, grind the almonds with 1/4 cup of sugar (I find that grinding almonds with sugar helps ensure a finer, even grind). Add this almond sugar mixture to the egg and egg yolk mixture, along with the pistachios and cocoa powder.
Melt the butter with 1/4 cups of chocolate chips in the microwave (use 50% power and 30 seconds intervals until butter is melted) and blend until smooth.
Add chocolate mixture to batter.
Beat the egg whites with 2 tablespoons of sugar to soft peaks. Gently fold into the batter.
Pour the batter into a well-greased loaf pan.Bake for about 40-50 minutes, until a toothpick inserted in the center comes out clean.
