- 1 cup whole milk, at room temperature
- 1 cup flour
- 1/2 teaspoon salt
- 1 tablespoon unsalted butter, melted

Preparation
Step 1
1.Position a rack in the lower third of the oven; preheat to 450 degrees . Grease a standard popover pan. Using a blender, mix the eggs, milk, flour and salt at low speed until just combined, about20 seconds. Add the melted butter; blend for 10 seconds.
2.Pour about 1/3 cup of the batter into each prepared cup (filling about halfway). Bake for 20 minutes. Lower the oven temperature to 350 degrees . Bake until puffed, golden and crisp, 15 to 20 minutes. Using a small, sharp knife, carefully cut around the sides of each popover to release. Serve immediately.
Variations (from Martha Stewart):
Gruyere-Thyme: Combine 1/4 cup fresh thyme leaves and 3/4 cup finely grated Gruyere. Sprinkle over batter-filled popover cups.
Chive: Whisk 1/4 cup minced chives into batter before filling cups.
Bacon and Black Pepper: Sprinkle 6 tbsp. crumbled cooked bacon over batter-filled popover cups; sprinkle with freshly ground pepper.
Sweet Variations:
First, modify batter: Whisk 1/2 tsp pure vanilla extract into egg mixture. Reduce salt to 1/4 tsp. and add 1 tbsp. sugar to egg mixture along with flour and salt. Then proceed with any one of the following variations:
Dark Chocolate: Sprinkle 2 oz chopped semisweet chocolate over batter-filled popover cups.
Cinnamon Sugar: Combine 1/4 cup sugar and 1/2 tsp ground cinnamon. Brush tops of baked popovers with 2 tbsp. melted unsalted butter, then coat in cinnamon sugar.
Orange: Whisk finely grated zest of 1 orange (about 2 tsp) into batter.
