Ingredients

  • 1 c. flour
  • 1/2 c. soft butter (1/2 salted, 1/2 unsalted)
  • 1 c. finely chopped pecans
  • 2 Tbsp. sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • confectioners sugar

Preparation

Step 1

Combine all ingredients except confectioners sugar in large bowl. Mix together thoroughly with your hands. Refrigerate 30 minutes.

Preheat oven to 375. Using hands, roll dough into 1" balls. Place 1" apart on ungreased baking sheets. Bake 15-20 minutes until set but not brown.

Let stand 1 minute before removing from the pan. Cool slightly.

Roll the balls in confectioners sugar while still warm. Cool completely.

Before serving or storing, roll again in confectioners sugar.

Makes 20 cookies.
