Ingredients
- 2 tablespoons butter
- 1 can (14 1/2 ounces) diced tomatoes
- 1 cup roasted red peppers, diced
- 1 tablespoon garlic, minced
- 1 tablespoons shallots, chopped
- 2 cups vodka, Absolut preferred
- 3 cups heavy cream
- juice of 2 oranges
- 2 cups fresh arugula
- 1 pound cooked lobster meat, chopped
- 12 ounces cooked linguine
- salt and pepper to taste

Step 1
In a saucepan over medium-high heat, melt the butter. Add the tomatoes, red peppers, garlic and shallots and saute until hot. Add the vodka and carefully ignite it with a match, letting the alcohol burn off. When the flame is out, add the heavy cream and orange juice. Let simmer until the sauce is reduced by one third. Add the arugula, lobster meat and the pasta. Toss to combine. If the pasta absorbs most of the sauce, add a touch more cream and orange juice. Serve hot.
