Step 1

Preheat oven to 375 degrees F. Place roast in a 16 x 13 roasting pan, and sprinkle salt on both sides. Insert an oven-safe meat thermometer in the thickest part, being careful to avoid the bone. Place in oven, bone side down, and roast until thermometer reads 125 degrees (for medium rare), about 2 1/2 hours. remove pan from oven, take out roast (leaving all fat and drippings in the pan) and let sit uncovered (interior will continue to cook). Meanwhile, prepare the Yorkshire pudding. When the pudding is nearly done, carve meat.
