Ingredients

  • For the dough:
  • 3 cups Flour (25 oz)
  • 3 eggs
  • 0.5 cup warm water
  • Salt to your taste
  • Filling:
  • 7 oz. (1/2 lb.) minced beef or chicken
  • 7 oz. (1/2 lb.) minced pork
  • 1 chopped onion
  • Salt and pepper

Step 1

1. You have to prepare the dough beforehand. Sift 25 oz. of flour into a mound, make a well in the center and add some salt, 3 eggs, half a glass of warm water and knead the dough; cover it with a tea towel and leave to stand for 30-40 minutes.
NOTE: you can add a spoonful of vodka in order to make the dough tender.

2. Make the meat filling. Take 7 oz. of beef and 7 oz. of pork and put through the mincer twice together with two onions. Add salt and ground black peppers to taste and then some cold boiled water.
NOTE: you can replace water with milk.

3. Make the Pelmeni
Cut out a circle and put a small ball of filling into each. The edges have to be joined and pinched together.

4. Put the pelmeni in the fridge to become firm.

5. Cook the pelmeni in the boiling salted water for about 10 minutes, until they rise to the surface.

6. Serve them with sour cream, vinegar, pepper or melted butter.
