Ingredients

  • 4 cup(s) frozen sweetened blueberries, or fresh, (960 ml)
  • 1/2 cup(s) water, (120 ml)
  • 1 Tbsp fresh lemon juice, (15 ml)
  • 1/4 Tbsp sugar, (60 ml)
  • 1/2 tsp ground nutmeg, (2 ml)
  • 1/2 tsp ground cinnamon, (2 ml)
  • 2 cup(s) all-purpose flour, (480 ml)
  • 4 tsp baking powder, (20 ml)
  • 1 Tbsp sugar, (15 ml)
  • 1/2 tsp table salt, (2 ml)
  • 1 Tbsp light butter
  • 1/2 cup(s) low-fat milk, (1%), (125 ml)
  • 1 tsp vanilla extract, (5 ml)
  • 8 Tbsp Cool Whip Whipped Topping Lite Whipped Topping, (120 ml)

Preparation

Step 1

In a saucepan, combine blueberries, water, lemon juice, sugar, nutmeg, and cinnamon. Set pan over medium heat simmer 5 minutes until berries begin to break down.


Meanwhile, sift flour, baking powder, sugar, and salt together into a large bowl. Add butter and, using your fingers, mix until butter is pea-size and well blended. Add milk and vanilla and mix until mixture forms soft dough.


Shape dough into 8 balls and place balls on simmering berry mixture. Cover tightly with a lid and simmer 10 minutes, until dumplings are puffed up.


Transfer dumplings to individual dessert bowls and top with berry sauce. Spoon 1 Tbsp (15 mL) Cool Whip Light over each serving
