Ingredients

  • 1 T grapeseed oil
  • 1 1/2 cup chopped red onion
  • sea salt & ground pepper to taste
  • 1 (28 oz) can diced tomatoes
  • 1 1/2 cup frozen chopped spinach
  • 2 cups dry red lentils
  • 2 cups water
  • 2 tsp. dried basil
  • 1 1/2 tsp. ground cardamom
  • 1 tsp. ground cumin

Preparation

Step 1

Heat oil in a large pot over medium heat. Cook the onion until golden brown. Season with sea salt and pepper.

Mix in tomatoes, spinach, lentils, and water. Add spices and bring to a boil. Reduce heat to low and simmer for 25 minutes, stirring occasionally, until lentils are tender.

Optional: Transfer soup to a blender and blend until smooth or until desired consistency is reached.
