Ingredients
- 1 cup segments + 2 TBS juice from 3 large navel oranges
- 2 cups coleslaw mix
- 4 scallions, sliced thin
- 1 tsp soy sauce
- 1 tsp honey
- 1 tsp grated fresh ginger
- 1/4 tsp ground black pepper
- 3 TBS EVOO
- 1-5oz bag arugula
- 1/2 cup sliced, glazed almonds

Preparation
Step 1
1. Roughly chop orange segments and toss w/ cabbage and scallions in medium bowl. 2. Combine orange juice, soy sauce, honey, ginger, pepper and oil in a small jar. Seal tightly w/ lid and shake dressing to combine. 3. Toss arugula w/ remaining dressing in large bowl and divide among 4 plates. Top arugula w/ cabbage mixture and sprinkle w/ almonds
